First of all I want to start off by saying that this is not actually Shakshuka. It has the feel of shakshuka the way that you make it, and honestly I don’t think it really has a name. Lexi’s Kitchen calls it a 3-Ingredient Breakfast Skillet, and although that name works just as well I prefer to call it Not Your Ordinary Shakshuka — bam! I like renaming things. Last night I googled ground turkey recipes since that was about all I had in my fridge. The fact that it said only 3 ingredients I crossed my fingers and hoped that I had the other 2 ingredients. So what ingredients does this not-so-wannabe shakshuka require?
- Ground Turkey
I knew for a fact I had the ground turkey since that’s what I was googling to begin with. Eggs? I bought brown eggs to try — brown eggs are good by the way — so it was checked off the list. The salsa was the only item I was uncertain of. I was lucky that we had just a little bit left!
This recipe is so damn simple that someone who never cooked a day in their life could make it! It’s also paleo, dairy free and gluten free. (So I wrote this while I was tired and had to ask someone if eggs were dairy — yeah, laugh it up chuckles!)
So I had the recipe, the ingredients, and it was time to cook it up. I was especially thrilled because using the cast iron skillet has been a new obsession of mine. I freaking love it! Anyway, the recipe is so simple you throw things in, you cook them, you eat them. End of story. Ready?
- 1 lb ground turkey
- 1 cup salsa
- eggs (throw in as many as you want per person)
- Cook the turkey
- Add salsa and let it get warm
- Crack eggs directly into the skillet, cover and cook for roughly 7 minutes
