Christmas is just around the corner and there is still so much to do! Shopping, gift wrapping, tree decorating, and cookie baking. For those who go to cookie exchanges this can be a really stressful time! I have seen some cookie exchanges have some really crazy rules (no store bought dough, must be gluten-free, vegan free, dairy free, tasteless globs of mush, etc.) If baking isn’t really your thing but you want to show your family and friends you can give them some baked love, make a fruit pizza!
I am horrible at baking. HORRIBLE. My goal is to try and get better but that’s beside the point. Fruit pizza is one of those rare gems that I can actually make without burning and it gets raving reviews from family and friends! The word that comes to mind when you hear fruit pizza is probably disgusting, am I right? You will be pleased to know that fruit pizza isn’t actually made with pizza dough at all — that’s right, it’s made with sugar cookie!
A fruit pizza is a great dessert because it can also be quite versatile. Add whatever fruit or other sweet toppings that your little heart desires for this tasty treat. If you feel like getting crazy then instead of strawberries throw some gummy bears on top! Exchange mini fruit pizzas by baking them as individual cookies instead of a giant one and add toppings.
I have made this dessert for several different holidays and I change up the fruit depending on what holiday it is! For the 4th of July for instance, I used strawberries and blueberries only to keep the treat red white & blue!
1 sugar cookie dough
1 cool whip
1 regular cream cheese
2-4 fruits of your choice (I chose kiwi, strawberries and grapes this time around)
1 pizza pan (any circular baking sheet will do)
Gummies & assorted candy (optional)
Preheat oven to 350 as per cookie instructions.
Spread cookie dough across entire baking sheet to make a full circle. Bake per instructions on cookie package.
Place in fridge for 30 minutes or until cool. Freezer works for faster results. (If you try to add the “sauce” while it is hot then it will melt right off of it.) Meanwhile cut up and prep all of your toppings.
Mix together equal parts cool whip to cream cheese. Spread across entire cookie-pizza.
Add toppings to your fruit pizza. Cover with foil and let chill in fridge until ready to serve.

The fruit pizza is such an easy recipe that unless you burn the cookie you cannot screw it up! Trust that when I say everyone will love it! Never have I had a bad review of this delicious dessert and I’m awful at baking! Nothing makes you feel more warm and cozy than sharing the love with those in your life.
